Pan fried fish on truffled mash, petit pois a la Francais, lemon beurre blanc

One of the topics I am passionate about is food wastage. In an ideal world we would show respect to our food and have none of it go in the bin.

Recently I was able to team up with Love Food Hate Waste (https://lovefoodhatewaste.co.nz) as part of Wellington on a Plate and hold a cooking demonstration on how to use up some of the most commonly usable but thrown away household food items.

According to the Love Food Hate Waste website: “New Zealanders throw away 122,547 tonnes of food a year. That is equivalent to 213 jumbo jets of food that has to go somewhere to rot, instead of being eaten. All of this food is worth about $872 million each year. That amount of food could feed the population of Dunedin for two years!” That’s only in New Zealand, globally “one third of food produced globally is wasted; that is 1.3 billion tonnes of food that is never eaten.” That to me is just mental and we can all do (and should) do our part by reducing our waste as much as possible. Shared here are some of the recipes that use some of LFHW’s top ten chucked out food items that you can try at home.

Fish
  1. 700g Fish fillets
Beurre blanc
  1. 150ml White wine
  2. 2 Lemons juice/zest
  3. ¼ Onion
  4. 150g Butter
  5. Salt and pepper
Potato mash
  1. 500g Potato
  2. 100g Butter
  3. 75ml Cream
  4. 20ml Truffle oil (optional)
  5. Salt and white pepper
French style peas
  1. 200g Peas
  2. ½ Lettuce
  3. 1/2C Chicken stock
  4. 40g Butter
  5. Salt and pepper
Chicken Stock
  1. Left over chicken frame/bones
  2. Vegetable offcuts and ends (carrot, onion, leek, celery, garlic)
  3. Any herb stalks (thyme, rosemary, parsley)
  4. Peppercorns (optional)
For the Beurre Blanc
  1. Finely dice the onion and add to a small pot along with the white wine and the juice and zest of one lemon and simmer until reduced by ¾. Dice the cold butter and over a very low heat whisk onto the wine reduction piece by piece to emulsify. Season with salt and pepper and the juice from the remaining lemon if you want more of a lemon flavour.
For the potato mash
  1. Peel and cut up the potatoes into even sized pieces so they cook at the same rate then place them in a pot of cold salted water and bring to the boil and cook until tender. In another pot heat the butter and milk together. Drain the potatoes and return to the pot, stirring over heat until they become fluffy. Mash with a potato masher or use a ricer or meuli. Fold in the hot cream butter mix and the truffle oil (if using) and season to taste.
For the peas
  1. Boil the peas until cooked, add to a pan or pot with ¼ of the butter. Add the chicken stock and reduce by 2/3 then shake in the remaining cold diced butter to emulsify. Finely shred the lettuce and add to the pea mix to wilt and warm through. Season to taste.
For the chicken stock
  1. In a pot place your left over chicken frame along with any vegetable off cuts or trimmings (and peppercorns) and cover with cold water. Bring to the simmer and leave to simmer for 4 hours. Pass through a sieve and you have chicken stock to use in any recipe you like such as soups, sauces, stews/curries, noodle broth etc.

Chicken Salad
  1. 300g cooked chicken, shredded
  2. 200g pumpkin
  3. ¼ cabbage
  4. 1 carrot
  5. ½ onion
  6. 3 slices stale bread, diced
Citrus mayo
  1. 2 whole egg
  2. 500ml canola (or other neutral) oil
  3. 1 teaspon Dijon mustard
  4. Salt, pepper, sugar
  5. Juice of 3 citrus fruit ie grapefruit, lemon, limes, oranges
Spice mix
  1. 1tsp ground coriander
  2. 1tsp ground cumin
  3. 1/2tsp allspice
For the mayo
  1. Reserve 1Tbs of the juiced citrus and place the rest in a pot and simmer until reduced by ¾. Using a stick blender or in a blender or food processor blend the whole eggs with the mustard and reserved Tbs of citrus juice until it becomes pale in appearance. Drizzle in the canola oil slowly to emulsify. Once all the oil is incorporated and the mayo is nice and thick fold in the citrus reduction and then season with a little salt and pepper and sugar (if required) to taste. If the mayo is too thick you can thin down with 1Tbs of hot water.
To make the salad
  1. Dice the pumpkin, toss in a little oil and then toss with the spice mix. Season with salt and pepper. Roast on a baking tray at 180C until tender, about 15minutes. Cool. Cut the bread into cubes and toss in a little oil, season and bake in the oven until lightly browned and crispy. Chiffonade/shred the cabbage thinly, julienne/finely slice the onion (red or white onion ok) and grate the peeled carrot. Fold through enough of the citrus mayo so the slaw is nicely coated. Serve with the pumpkin, chicken and croutons.

Croquetten, Dutch style crumbed chicken and cheese croquettes

For the croquettes
  1. 500g cooked chicken
  2. 2Tbs Butter
  3. 4Tbs Flour
  4. 1 sprig thyme
  5. 2 bay leaves
  6. 1 clove
  7. 1/2C Milk
  8. 1/2C Chicken stock
  9. Salt, pepper
  10. 2 eggs, separated
  11. 200g cheese
  12. 1Tbs Parsley
For the crumb
  1. Reserved egg whites (2)
  2. 1/2C flour
  3. 1/2C breadcrumbs
To make
  1. Heat the milk, chicken stock along with the thyme, bay leaves and clove. Melt the butter, add the flour and cook out until sandy. Strain the milk mix and pour onto the flour butter (roux) in batches, stirring until thickened. Add the cheese and stir until dissolved then add the chopped chicken and parsley, take off the heat and season with salt and pepper then stir in the egg yolks. Cool down on a tray and once cool make into balls and crumb by passing through the flour, then whisked egg whites and the breadcrumbs. Deep fry until golden brown at hot (170C).

Whole roast duck with cranberry, bacon and walnut stuffing

Since it is now Duck shooting season, here is a wee bonus recipe utilizing the whole duck and which can be done easily at home. Be sure not to cook the duck longer than you need to or it can dry out.. This is a great opportunity to use your Dutch oven if you have one and it will yield great results as they retain the heat and moisture really well. My recipe for Duck Confit can be found in the July/August edition of NZ Guns & Hunting magazine and keep an eye out in the next edition for tips on how to pluck and dress your duck.

Here is an easy recipe that uses the whole duck but can be adapted to use for any roasting bird.

1 Duck
  1. plucked, cleaned and gutted
Stuffing
  1. 2 Stale Bread Rolls
  2. 1 Shallot or ¼ Onion
  3. 1 Clove Garlic
  4. 1Tbs Dried Cranberries (can substitute chopped dried apricots)
  5. 1Tbs Walnut Pieces
  6. 1Tsp Dried Mixed Herbs
  7. 1 Egg
  8. 1 Small Bunch Parsley (leaves only)
  9. 2 Rashers of Bacon
  10. Salt and Pepper
Duck Fat Potatoes
  1. Potatoes
  2. Duck Fat
  3. Salt
For the Stuffing
  1. Roughly chop up the garlic, shallot and bacon. In a food processor pulse these three ingredients together then add the bread and parsley and pulse until it resembles coarse bread crumbs. Add the cranberries, walnuts and the egg along with some salt and pepper and mix for 5-10 seconds until it has come together. Stuff the duck’s cavity with the stuffing mix and secure the hole with a toothpick. Season the outside of the bird with some salt and bake in a preheated oven at 160C for 1.5-2hrs (depending on the size of your bird) or until the leg meat is tender and the skin is golden and crispy. If the duck is getting too brown but is not cooked to your liking you can cover it with tinfoil to stop it from burning. If you are concerned about the breasts drying out you can insert a rasher of bacon under the skin on top of each of the breasts. Save the duck fat for roasting your potatoes.
For the Potatoes
  1. Peel your potatoes (Agria potatoes are nice here) and cook in a pot of salted cold water until they are about 80% cooked and are still a little bit firm in the centre. Drain and keep to one side. In a roasting tray place a few spoonfuls of duck fat and place the tray with the fat in it in a 200C oven until it is really hot, about 15mins. Being careful not to burn yourself tip the nearly cooked potatoes into the tray with the duck fat and shake the pan a little to coat the potatoes with fat and season with a little salt. Place back in the oven and roast until nice and crispy, about 20-30mins.
To Serve
  1. Once the duck is cooked cover with some tin foil or a tea towel and leave it to rest for 15mins before carving so the juices set and the meat has time to relax. You can’t go wrong serving it with a good bottle of Central Otago Pinot Noir.

Wild venison, blue cheese and mushroom pie

I am a professional chef and amateur hunter. I have spent time hunting in most of the North Island ranges but do most of my hunting in the Tararua’s. Working as a chef has sent me to several locations in the world and I have worked in New Zealand, Malaysia, Cook Islands and the Maldives. I first started out hunting rabbits and possums with my old man when I was a kid before moving on to goats and deer as I grew older. As a chef I like to use the best produce available. Hunters when killing humanely and taking only what they need can end up cooking with not only the most ethically harvested meat but when dealt with properly, the best quality also. I think it’s really important to know where your food comes from and how best not to waste it, and that’s why I think hunting and cooking marry so well together and that’s what I hope to promote and achieve through sharing the recipes and techniques we use to cook wild game professionally.

Wild venison, blue cheese and mushroom pie
Serves 6
This recipe utilises Venison shoulder and is great dish for the colder months. Shoulder is a heavily worked muscle which means it requires a slow long cooking time to break down the connective tissue, the flip side is that the tougher cuts of meat have more flavour!

Ingredients
  1. 1kg Diced, trimmed Venison shoulder (or neck)
  2. 1/2 Onion
  3. 3cl Garlic
  4. 100g Blue cheese wedge
  5. 1 bottle Speights or any other ale beer
  6. 200ml Red wine
  7. Chicken stock (or water) – enough to cover
  8. 1 Sprig Thyme
  9. 1 Sprig Rosemary
  10. 50g Dried mushrooms (porcini best but can use shittake)
  11. 100g Mushrooms (buttons or flats)
  12. 2Tbsp Duck fat (or butter or cooking oil)
  13. 8Tbs Plain flour
  14. Salt and pepper
  15. 1 Pkt Puff pastry sheets
  16. 1 Egg (whisked with 1Tbs water)
  17. 2Tbs Melted butter
Instructions
  1. Crush the garlic and dice the onion. Roughly chop the mushroom stalks and dried mushrooms. Heat the duck fat in a pot and cook off the garlic, onion and mushrooms until nicely browned. Dust the diced venison in a little flour and in 4 or 5 batches, sear in a hot pan with a little oil until nicely browned. Combine all ingredients together in a deep oven dish (adding enough water or chicken stock so the ingredients are covered) and braise slowly at 150C until tender – about 2-3hrs. If the sauce is too thin then drain the liquid into a pot and reduce until nicely thickened, season with salt and pepper. Cool.
  2. Once cool grease several small (or one large) pie tins and line the base with puff pastry, fill with the pie mix and crumble some blue cheese on top. Place some puff pastry on top for a lid and crimp the edges with a fork. Trim off any excess pastry and brush the top with some whisked egg wash. Bake 1t 180C for about 12-15 mins or until the pastry is cooked and a nice golden brown.
  3. I suggest serving with some buttery mash potatoes and tomato relish.”

Truffled Cauliflower and Parsnip Soup w Pancetta Crumbs

This is a really heart soothing soup, the truffle oil really elevates this dish so if you have it then be sure to use it. To make a pure cauliflower soup you can omit the parsnip and replace with equivalent cauliflower and vice versa. To make it vegetarian omit the pancetta crumbs and replace with croutons and swap the chicken stock for vegetable stock.

Cauliflower and Parsnip Soup
  1. 3Tbs Butter
  2. 2cloves Garlic
  3. 2 Bay Leaves
  4. 1/2 Cauliflower (or 1 whole small one)
  5. 3-4 Parsnips
  6. 500ml Milk
  7. 500ml White Chicken Stock
  8. Salt and White Pepper
  9. Truffle Oil
Pancetta Crumbs
  1. 1Tbs Olive oil
  2. 4 slices Pancetta (or can replace with Salami etc)
  3. 1/2clove garlic
  4. 1Tbs Chopped Parsley
  5. 1tsp Chopped Thyme
  6. 1/4C Breadcrumbs (preferably panko or home made)
For the Soup
  1. Sweat the chopped garlic and the chopped parsnip in the butter over a low heat for 2-3 minutes. Add the stock and bay leaves and simmer for 10-15mins until the parsnip is nearly cooked. Add the chopped cauliflower and the milk and simmer over a low heat until both the cauliflower and the parsnip are very soft and fully cooked. If at any time the liquid reduces too much during cooking and the vegetables are no longer covered you can just top it up with some more stock or water. Remove the bay leaves and puree in a blender or use a stick blender. Add more milk if the soup is too thick and season with salt and white pepper to taste.
For the Pancetta Crumbs
  1. Finely chop the garlic and the pancetta and fry in the olive oil until golden brown. Add the breadcrumbs and chopped thyme and cook until all is golden brown. Drain on a paper towel then in a small bowl mix through the chopped parsley.
To Serve
  1. Serve the soup piping hot in warmed bowls with a generous drizzle of the truffle oil and a good sprinkling of the crumbs on top.

Brain Popcorn w Smoked Chilli Mayo

 Here’s one of the recipes from my most recent Offal cooking class. There’s no fundamental difference in offal from any other cut of meat (it all comes from an animal) and if cooked right can be delicious. Lamb’s brains and sweetbreads are two really non confronting types of offal and lend themselves really well to crumbing and here I have served with a smoky chilli mayo which you could also serve with anything deep fried.

Court Bouillon
  1. 1lt water
  2. ½ onion
  3. 1 celery stick
  4. 2 bay leaves
  5. 1/2tsp pepper corns
  6. 1tsp salt
Smoked Chilli Mayo
  1. 2 yolks
  2. 1 whole egg
  3. 1tsp tabasco sauce
  4. 1/2 garlic clove
  5. Juice of 1 lemon
  6. 200ml canola oil
  7. 60ml olive oil
  8. Salt and pepper
  9. 1/4tsp Chilli powder
  10. Dash smoke essence
Crumbed Brains
  1. 250g Lamb's Brains
  2. 1 Egg
  3. 100g Flour
  4. 100g Panko bread crumbs
For the Brains
  1. Firstly make the court bouillon by roughly chopping the vegetables and combining all the ingredients in a pot. Bring to the boil and then drop to the simmer. Add the brains and simmer for a 3-5mins until they are just set. Remove and place on a tray and chill.
For the Mayo
  1. Combine all ingredients except the oil and smoke essence in a food processor. Slowly add the oil while blending to emulsify. Add smoke essence to taste and more tabasco/chilli powder if more heat is desired. Season. Add warm water at the end for consistency if necessary.
To Finish
  1. Whisk the egg with a little water. Crumb the brains by first dredging in the flour, then the egg and finally in the panko bread crumbs. Shallow fry or deep fry in oil until crispy, drain on paper and season.

Croissant Bread and Butter Pudding with Rum Caramel and Fried Banana

Bread and butter pudding Got some croissants left over after the weekend? Put them to good use with this bread and butter pudding recipe. If you don’t have any pastries on hand you can use any sort of white bread but using pastries or croissants raises it to the next level.  

Croissant Bread and Butter Pudding with Rum Caramel and Fried Banana

Fried bread pudding
  1. 12 small or 6-7 large croissants/Danish pastries
  2. 3 eggs
  3. 3 egg yolks
  4. 1/2 Cup sugar
  5. 450ml cream
  6. 1/2tsp vanilla essence
Rum caramel
  1. 150g sugar
  2. 75ml water
  3. 50ml cream
  4. 30ml rum
  5. 50g butter
For the bread pudding
  1. Whisk the whole eggs and the yolks with the sugar until the sugar has dissolved.
  2. Scald the cream with the vanilla and whisk onto egg mix, pass through a fine sieve.
  3. Slice the pastries and arrange in layers in a greased terrine mould or loaf tin making sure to ladel some of the custard mix over the pastries between each layer.
  4. Push down the pastry and custard mix to ensure everything is well combined and leave to rest for 30mins for the pastries to fully absorb the custard.
  5. Bake at 120C for approximately 30 minutes until nicely puffed up and golden brown.
  6. Cool, slice and then pan fry in butter or reheat in the oven to serve.
For the Rum Caramel
  1. Simmer the sugar and water to golden caramel.
  2. Carefully and off the heat, stir in the butter and then the cream and lastly the rum.
  3. Serve warm.
Notes
  1. Serve with some fried bananas and some good quality vanilla ice cream or clotted cream.

Thai Green Chicken Curry

During my travels cooking I have been lucky enough to work with some fantastic Thai chefs both when in Malaysia and when working for a Thai resort in the Maldives. To me Thai cuisine is all about punchy vibrant flavours, which I love. You’ve got to have the right balance between salty (fish sauce), sour (lime juice), spicy (a good kick of chili) and sweet (sugar) to make sure you get an authentic taste, and if you’re not sure what that authentic taste is then what better excuse than to book a flight to Thailand!

Thai Green Curry

Thai Green Curry Paste
  1. 1/2 stalk lemongrass
  2. 1 green chili
  3. 1/2 shallot
  4. 2 cloves garlic
  5. 8g galangal
  6. 1/4 cup coriander (leaves and stalks)
  7. 1/4 cup basil
  8. 1/4 tsp. ground cumin
  9. 1/4 tsp. ground white pepper
  10. 1/4 tsp. ground coriander
  11. 2 Tbsp. fish sauce
  12. 1/2 tsp. shrimp paste
  13. 1 Tbsp. lime juice
  14. 1/2 tsp. brown sugar
  15. 2 Tbsp. coconut cream
Thai Green Chicken Curry
  1. 400ml coconut cream
  2. 100g bamboo shoots
  3. 70g green curry paste
  4. 1tbs fish sauce
  5. 200g chicken thighs
  6. ½ tsp palm sugar
  7. 1/2tsp green chilli – seeds removed, fine chop
  8. 8 kaffir lime leaves
  9. 200ml water
  10. 1tbs basil – chopped
To serve
  1. 12 Basil leaves
  2. 4tsp Red chilli - sliced
For the Curry Paste
  1. Roughly chop and blend all the ingredients together in a blender or food processor until well combined.
For the Thai Green Curry
  1. Simmer 1 cup of coconut cream and curry paste over moderate heat, stirring until it becomes fragrant and the oil starts to separate from the coconut cream.
  2. Add the Chicken and cook over a moderate heat, stirring frequently until the chicken changes colour.
  3. Add the remaining coconut cream and sufficient water to cover the chicken.
  4. Add Lime Leaves and Bamboo Shoots.
  5. Bring to the boil (stirring), reduce heat and simmer until the chicken is tender.
  6. Stir in the fish sauce, sugar, green chilli and basil.
  7. Simmer for a further 5 minutes.
  8. Transfer to a serving bowl and scatter with the fresh Basil and Chilli slices.

Dark chocolate mousse

A chocolate mousse is only as good as the chocolate you use so try to use good quality. I don’t like using too much sugar in my mousse and don’t use cream, to me a chocolate mousse should taste first and foremost of chocolate with a little sugar as seasoning, I feel cream tends to dilute the chocolate taste and too much sugar dominates. Chocolate Mousse
  1. 230g good dark chocolate (such as Monticristi 70%)
  2. 4 eggs
  3. 1 lemon
  4. 30g sugar
  5. 15ml brandy (optional, can substitute with a couple of drops of vanilla essence)
For the Mousse
  1. Separate the eggs and lightly break up the whites.
  2. Place the sugar in a pot with a little water and a squeeze of lemon juice; bring to the boil for 1 minute.
  3. Whisk the whites using a mixing machine with the whisk attachment on a high speed setting; continue for five minutes or until stiff peaks are formed.
  4. While the whites are being whisked, gently pour the sugar syrup down near the side of the bowl so that it is incorporated gradually.
  5. Melt the chocolate gently and beat in the yolks and brandy. You may need to add a tablespoon of boiling water if the chocolate seizes at this point.
  6. Fold in the beaten whites in three parts.
  7. Pour into moulds or glasses and chill in the fridge until set.
  8. Serve with your choice of garnish such as wafers, toasted almonds or berries.
